What to eat when pursuing some sort of meatless day in your weekly routine can be either exciting or discouraging. I was definitely part of the latter camp; not knowing what to eat was a good enough excuse to postpone this habit for a while.
To help you get started, I am sharing what I had during my first month of weekly meatless day with my personal rating. Heads up! I am not a food blogger, so pictures are not Instagram perfect 😉 Here we go!
Week #1: Coconut Lentil Curry

Starting it off with Indian cuisine, this coconut lentil curry will surely not disappoint. Turns out, lentils and coconut milk make a good combo! Recipe linked in the icon below.
Week #2: Mexican Quinoa Stew

Heading west to Mexico, this stew is yummy but earns its bonus marks on how easy it is to make. I am a big quinoa fan, so I definitely enjoyed this one!
Week #3: Brazilian Chickpea Stew

This was the first ever Brazilian meal made in my kitchen. The original pictures on Insta looked great so I had higher hopes. However, I will be giving it another try because I am certain I messed up somewhere along the way 😉
Week #4: Mujadara

Returning to my traditional cuisine, Mujadara is a classic Middle Eastern dish and my family’s go-to vegetarian meal. It is made from lentils, bulgar (cracked wheat), and then garnished with caramelized onions (which I skipped oops) and yogurt. I gave mom a call for this one, but linked below a recipe that seems pretty good!
I’ve found that a neat perk of going meatless has been adding more international flavours to my novice kitchen, which continues to keep things exciting for my family. What’s next for this week? Either a vegetarian burrito or butternut squash risotto. Yummy.
